Prawn toast

 

Serves 4 | For the prawn lovers

Ingredients

  • 12 green prawns peeled | deveined

  • 1 egg white

  • ¼ cup chopped green shallots

  • 40g sesame seeds

  • 6 slices sourdough | sliced thin

  • 10 ml prawn oil

  • 30g butter

 

Method

  • Preheat oven to 190 degrees

  • In your blender, puree the prawns with egg white shallots & oil

  • Spread the prawn mix , ½ cm thick on the sour dough

  • Sprinkle the sesame seeds on top

  • Heat a pan to a medium heat with prawn oil & butter place the prawn meat side down first cooking 1 to 2 minutes then turn so both sides are cooked, place in a oven for 5 minutes

  • Top with coriander and eat warm, with a extra drizzle of prawn oil if your a prawn lover

Best eaten hot
