Prawn toast
Serves 4 | For the prawn lovers
Ingredients
12 green prawns peeled | deveined
1 egg white
¼ cup chopped green shallots
40g sesame seeds
6 slices sourdough | sliced thin
10 ml prawn oil
30g butter
Method
Preheat oven to 190 degrees
In your blender, puree the prawns with egg white shallots & oil
Spread the prawn mix , ½ cm thick on the sour dough
Sprinkle the sesame seeds on top
Heat a pan to a medium heat with prawn oil & butter place the prawn meat side down first cooking 1 to 2 minutes then turn so both sides are cooked, place in a oven for 5 minutes
Top with coriander and eat warm, with a extra drizzle of prawn oil if your a prawn lover
Best eaten hot
