Blue eye cod with Caper onion Salsa

Ingredients
15ml olive oil
Salt & pepper
4 pc blue eye | 150g
1 small red onion finely diced
10ml prawn oil
40 mls seaweed cider vinegar
10g baby capers| washed ,dried
¼ bunch Italian parsley shredded
1 stem dill| picked

Method
Place the lightly oiled, seasoned fish serves side down first, In a fry pan,
In a bowl mix the onion, prawn oil, vinegar, capers, parsley, dill & salt & pepper together
Serve with cooked fish & potatoes
