Chilli prawn pasta

 

Serves 4

Ingredients

  • 300g flour

  • 3 eggs large

  • 1 teaspoon fine sea salt

In the pan

  • 20g butter

  • 10ml prawn oil

  • 12 green prawns peeled and butterflied

  • 3 garlic cloves slivered

  • 1 long red chilli sliced and seeded

  • 50ml white wine

  • 1 cup picked coriander

  • 1 shallot sliced

  • Salt and pepper to taste

Method

  • Mix flour, salt & egg, bring the dough together & Knead for 5 minutes, wrap & rest for 20 minutes

  • Roll with flat attachment & fold to develop laminate in pasta, roll sheets thin to see your fingers through the pasta sheets, cut to tagliatelle

  • Plunge into boiling salted water, once float pasta is almost ready

  • Heat your pan, add butter & prawn oil followed by the prawns, cook ¾ , add garlic,chilli, add wine & reduce.

  • Toss the cooked pasta with a little pasta water.

  • Season and serve with coriander shallot & more a little more prawn oil ( if you love the shell of prawn flavour)
