Prawn & Pork Noodles

Inspired by Singapore & Australian Produce

 

Serves 10

Ingredients

  • 50ml Sunflower oil

  • 20ml PRAWN OIL

  • 130g Diced Smoked Chorizo | Australian Pork

  • 250g Kurumban Prawn

  • 115g Red banana capsicum | diced fine

  • 25g Garlic | finely diced

  • 20g Ginger | finely diced

  • 15g Green chillis | long , finely diced

  • 80g Bean sprouts

  • 80g Shallots | Finely Sliced

  • 250g Shredded wombok

  • 3 eggs | beated

  • 1kg Fresh rice noodles | plunged & air dried

  • 50ml Soya

  • 20ml Oyster Sauce

  • Prawn Oil

Method

  • In a Hot wok add some of the oil, chorizo, prawn capsicum cook half way,

  • Add the garlic, ginger, chilli, sprouts, shallots & wombok cook & stand aside

  • In the hot wok add oil eggs cooked & stand aside

  • In a hot wok add some oil & noodles, toss through soya & oyster sauce & all of above

  • Season with more PRAWN OIL if you love Prawn, Serve
