Seaweedery Wild catch Laksa

 

Serves 4

Ingredients

  • 1 kg Prawn whole, peeled|use all shells for broth

  • 220g wild barra ocean tail, cut in 4 pc skin on and scored air dry in fridge

  • 20 mls prawn oil

  • 2 lemon grass sticks tenderised

  • 3 long red chilli deseeded

  • 2 brown onion sliced

  • 6 coriander roots, well washed

  • 20g tamarin sliced or paste

  • 2.5cm piece turmeric| chopped

  • 2 cm piece galangal

  • 1 lt chicken stock

  • 400ml coconut cream

  • 40g dark brown palm sugar

  • 2g fish sauce

  • 1 lime

Garnish

  • Bean sprouts

  • Macadamias

  • Sliced de seeded cucumber

  • Fresh lime cheek

  • Prawn oil

  • Laksa leaf

  • Coriander leaf

  • Chilli flakes| fresh

Method

  • Prepare the prawns and Fish

  • In a medium saucepan add the Prawn shells with the prawn oil, cook until orange

  • add the lemongrass, chilli, onion,coriander root, tamarin, turmeric, galangal, cook until fragrant aromas fill the kitchen,
