Prawn gremolata pizza

PIZZA BASE
Ingredients
2 x bases
4g dry yeast
225 ml room temp water
350g Bakers flour
1g salt
15ml olive oil

TOPPING
Ingredients
2-8ml prawn oil
1 bunch Italian parsley | chopped
4 garlic clove | slivers
1 lemon zest, cheeks juice to serve
12 king peeled green prawns | split
Pinch Sea salt
Baby rocket
Method
Preheat oven to 240 degrees
Dissolve yeast in wate
In a bowl mix flour, salt, oil and add the liquid yeast water and stir until combined, knead for 2 minutes, place the dough in a lightly oiled bowl & prove until doubled in size
mould the dough in 2 balls & rest for 10 minutes
Line pizza trays with light spray of oil and semolina, press the dough out to 4mm
Top with prawn oil, parsley, garlic, Lemon zest green prawns
Bake for 8 minutes or until the base is golden brown
Serve with a squeeze of lemon, salt & rocket salad
