Prawn gremolata pizza

PIZZA BASE

Ingredients

  • 2 x bases

  • 4g dry yeast

  • 225 ml room temp water

  • 350g Bakers flour

  • 1g salt

  • 15ml olive oil

TOPPING

Ingredients

  • 2-8ml prawn oil

  • 1 bunch Italian parsley | chopped

  • 4 garlic clove | slivers

  • 1 lemon zest, cheeks juice to serve

  • 12 king peeled green prawns | split

  • Pinch Sea salt

  • Baby rocket

Method

  • Preheat oven to 240 degrees

  • Dissolve yeast in wate

  • In a bowl mix flour, salt, oil and add the liquid yeast water and stir until combined, knead for 2 minutes, place the dough in a lightly oiled bowl & prove until doubled in size

  • mould the dough in 2 balls & rest for 10 minutes

  • Line pizza trays with light spray of oil and semolina, press the dough out to 4mm

  • Top with prawn oil, parsley, garlic, Lemon zest green prawns

  • Bake for 8 minutes or until the base is golden brown

  • Serve with a squeeze of lemon, salt & rocket salad
